When I saw all this brick-made building in Chinatown, the first thing I thought was:
“Ahh, what a magnificent building… I’m sure pottery and porcelain from Arita and Koishiwara [places from the Kyushu prefecture – Ed.] would suit it perfectly.”
This is the first time I thought about bowls while making a restaurant.
Then, I thought about organic ingredients made in Hawaii.
And then, I immediately went to take a look at Hawaiian farms and vegetable gardens.
And when I got back in Japan, I immediately headed for Arita.
Our restaurant is taking shape little by little!
